These cold water lobsters are allowed to thrive in their natural habitat and are only harvested at peak adult conditions to ensure the juiciest and most meaty tails. Produced off the cold shores of South Africa, these lobster tails are one of the premier lobster tail species served around the world.
When most people think of cold-water lobsters, they think of the classic Maine lobster with two claws. When most people think of warm-water lobsters, they think of the giant Florida or Caribbean spiny lobster with a huge tail and no claws. South African lobsters are interesting in the sense that they incorporate the best of both worlds.
There are four different species of South African lobster, and we use the South Coast rock lobster or Palinurus Gilchristi at Truluck’s. The reason for this is that this area is extremely well managed by South Africa Fishing Ethically (SAFE). SAFE is committed to fully protecting the stewardship, sustainability, quality, and traceability of South Coast fisheries.
This is important because due to the demand and price, poaching businesses thrive in this region. There are only three operators in the world that are allowed to fish off the South Coast. They’re known as crayfish or “kreef” locally. These kreef are caught on the boat, The Rigel 4, using long line pots at depths of 450 to 650 feet with the average temperature being about 50 degrees Fahrenheit.

The boat goes out for a month-long fishing trip, and the crayfish caught along the journey must be frozen to keep them fresh. The Rigel 4 crew processes the kreef they catch by blast freezing them under 20 minutes after being caught to prevent excessive handling and thawing/re-thawing. This may not seem like a big deal but it’s a significant game changer and produces a perfectly delicious tail.

South African Lobster is also known as Cape Lobster, or spiny rock lobster. Wild caught rock lobster tails, also known as spiny lobster, have just arrived at our seafood department at our Rittenhouse location. This crustacean, which is not seen as a true lobster due to its lack of large front claws, is still practically the same in flavor and texture, albeit the meat being a little more delicate and sweet.
Did you know that lobsters molt their shells? As they molt, their shells harden. This means that the bigger the lobster, the harder the shell, the tougher the meat. While big lobsters tend to take the spotlight for their grand size, for your best lobster experience, it is our choice to sell only the 4-4.5oz.
These 4 oz. lobster tails are the perfect portion size for a light summer meal, and they hail all the way from the South African coast, which is famous for its Great White sharks and incredible surf. Preparation for this meat is more akin to cooking a large shrimp because it’s not as tough as a Maine lobster.

Lobster is one of the easiest meals to prepare when done correctly! Our easy to use pre-packaged lobster is ready to cook and can be prepared in no time at all. We recommend flaunting the tails of these beauties by steaming and serving with drawn butter, or simply grilled.

Our lobster tails are a true delicacy, with flavor that lends itself to a variety of versatile preparation methods. This is such an awesome protein the least amount you do to this the better it will be. Split the tail and place a tiny amount of lemon, butter, salt, and pepper.
Simple Grilling Instructions:
- To prepare lobster, cut each lobster tail in half lengthwise.
- Coat lobster tails and onions with cooking spray.
- Place lobster tails, cut sides down, on grill rack coated with cooking spray; grill 3 minutes.
- Turn lobster; grill 5 minutes.
Preferred Cooking Time: The Lobster Tails just need to grill for about 6-8 minutes on depending on the size of the tail, typically 1 minute per ounce on a grill thats 400 degrees.
Sauce Preparation:
- To prepare sauce, combine rind and next 7 ingredients (through garlic) in a medium bowl, stirring well with a whisk.
- Gradually add butter, stirring constantly with a whisk.
Checking for Doneness:
Pick a tail to test for doneness. Using a knife, cut through the shell into the thickest part of the tail meat. The meat of a fully-cooked lobster tail is white with no sign of a translucent, grayish color.
