- 3 cups rice
- 2 cups beans
- Fresh tomatoes 700ml
- 3 Tablespoons canned tomatoes
- 3 seasoning cubes
- 1 cup of sliced onions
- 1 kg Chicken
- 1 teaspoon of powdered ginger
- 1 teaspoon of powdered garlic
- 500 ml Vegetable oil
- 5 scotch bonnet peppers
- Salt to taste
Tips for the Perfect Jollof Rice and Beans
- Dutch oven pot: The last thing we need in this recipe is soggy rice or mashed beans and that’s why we steam. A Dutch oven pot traps all the moisture which allows your beans and rice cook fully with little manipulation.
- Quality ingredients: Opt for fresh and high-quality ingredients to enhance the overall taste of the dish.
- Parboiled rice: Parboiled rice is ideal for Jollof Rice as it retains its shape and texture during the cooking process.

Step-by-Step Instructions
The process of making Nigerian rice and beans is a lot simpler than the many other recipes that exist. It is as simple as getting your rice, beans and salt. This Rice and Beans recipe is probably going to be easier than most other recipes you find online. What we have above is a delicious-looking and tasting plate of rice and beans combo that is made using my powerful recipe.
Nigerians eat their rice and beans with a side stew sauce or soup, the most popular choice is the popular red stew. This recipe is not only a simple way to give your rice dish a bit of character, it is a nutritious one too! With just a few ingredients, you can have this ready in no time. Pair with your favourite stew.
- Precook the beans and rice separately, wash, and set aside in different bowls.
- Grind the tomatoes, (700ML). Add 5 scotch bonnet pepper and blend all together.
- Season the chicken with 2 stock/seasoning cubes, half cup of sliced onions, salt).
- Let the chicken boil for 10-15 minutes.
- Fry the chicken and set the stock aside.
- Precook the beans alone with just water for 35-40 minutes.
- Fry the tomatoes using 300ml vegetable oil.
- Add half cup of sliced onions, fry for a minute then fry the tomatoes.
- Stir while it fries.
- Add half a cup of sliced onions, fry for a minute, and add the ground tomatoes/ pepper.
- Stir and fry until it looses its sour taste and thickens, remember to turn frequently to avoid burning, should take 15-20 minutes.
- Add two cups of water, 1 seasoning cube, salt to taste, a teaspoon each of curry, ginger, and garlic powder.
- Stir together and add the remaining fried tomato/pepper that you previously removed.
- Cover and cook on medium heat for the next 25 to 40minutes. Check when the rice/beans soften and the water is dried.
HOW TO COOK A PERFECT NIGERIA JOLLOF RICE AND BEANS STEP BY STEP
Alternative Method
Method one is more like a stewed version similar to jollof rice, while Method two is similar to the way I make my beans porridge. Cooking it either way I find keeps the rice and beans intact and doesn’t compromise flavour. In fact I would say it is rich in flavor because the seasoning comes in at the end. Just try and see.
- Place beans in a pot, add 8 cups of water and begin to cook.
- When beans has cooked for about 30 mins, add half of the chopped onions into the beans, then add bouillon powder to taste.
- Begin to cook rice in a separate pot. Cook till its done. Don't cook till it becomes mushy. it needs to be Al dente
- Blend bell pepper, tomatoes, habanero pepper and one onion and set aside
- In a saucepan heat up oil, stir in the remainder of chopped onions. Stir until softened and translucent.
- Pour in the blended pepper mix, cook till reduced in size. Takes about 45 mins. Turn off heat while you wait for the beans to get cooked
- When the beans is ready, mix the sauce, rice and beans together. Add in about a 1/4 cup of water stir in, taste for seasoning and adjust accordingly.
- Place pot over medium low heat and allow to simmer for about 2 minutes.
Serving and Storage
Nigerian Rice and Beans can be served as a main dish or as a side dish. It pairs well with meats, stews, Ata din-din, Chicken stew, fish stew, and vegetables.
Reusable airtight containers are always my go-to for keeping leftovers in my freezer. Ziplock bags work as well too. I would recommend keeping the rice and beans in the freezer in sizeable portions for ease. You can reheat your rice and beans in the microwave or stove pot. To reheat on the stove pot, transfer the frozen rice and beans to the pot, add a little water, and cover it.
