Ingredients
- Eggs: I use six large eggs for this recipe. The recipe calls for 6 large eggs.
- Vegetables: Plum tomatoes, red bell pepper, habanero pepper, onion, and garlic.
- Sliced pepper to taste.
- 1 cup of sliced onions.
- 2 spoons sliced pepper
- 2 spoons of Sliced Green Peppers optional
- Oil: 200 ml Vegetable oil
- 2 cups of sliced fresh tomatoes.
- 1 Seasoning cube
- Salt to taste.
Step-by-Step Instructions
This one is going to be easy. If you are new to making Nigerian foods and desires to start with the recipes that are easy, I would suggest you start here. There are actually two ways to do this. You can decide to use lots of tomatoes and just about 2 eggs. I used 3 eggs and about two cups of sliced tomatoes, so there are more eggs in this recipe. I wanted to make this as simple as it can be. That is the reason for the step-by-step images below.

- Coarsely blend the tomatoes, red bell pepper, habanero pepper, and half an onion in a blender. Do not add water to the vegetables when blending them. Chop the other half of the onion and mince the garlic.
- Start by Slicing your tomatoes, onions, and peppers using a kitchen knife. Slice your tomatoes, onions, and peppers as you would find in the plate below.
- Set your frying pan on the heat and add just 200ml of oil (vegetable or olive oil), allow the oil to heat up for few minutes.Set frying pan on the heat and add just 200ml of oil (vegetable or olive oil), allow one minute before adding the sliced tomatoes/onions/peppers.
- Pour in the blended tomatoes and pepper mix and stir. Let it simmer on medium-high heat until most of the liquid has evaporated.
- Add the sliced tomatoes, peppers, onions and fry. Allow this to fry for 10-15 minutes.
- When it’s hot, add the minced Garlic, saute for a minute. Add the chopped Tomatoes and Peppers, Knorr cube, Thyme, Curry powder and Salt to taste.
- Fry tomato paste for about 3 mins while stirring to prevent burning. Add in the chopped red and green bell peppers. Cook for another 2 minutes on low heat and it’s ready to get in your belly.? After cooling down to warm though.
- Add salt to taste, half of a seasoning cube. Stir to avoid burning. Add salt to taste.
- Beat eggs in a separate bowl, add a pinch of salt and pour it into the frying tomatoes. Beat the eggs in a separate plate. Add a pinch of salt to it and then pour on top of the frying tomato/onion/pepper combination.
- Pour in the eggs and let it cook a bit before you stir. If you stir immediately, the eggs will completely dissolve into the stew. Stir the eggs until they are well mixed in, and cook for about a minute or two.
- Allow the egg to fry. Don't let it get burned. Allow a minute and then stir.
- Add the cup of water to the beaten eggs then gradually stir the egg/water mix into the bubbling stew. Stir continuously to break up the eggs.
- You can sprinkle a handful of fluted pumpkin (ugu) leaves if you like. That is just how to make egg sauce for yam.
Additional Tips
Additional Ingredients: This recipe is for basic egg sauce. You can add more vegetables - green pepper works really well in the sauce. Some people chose to add a handful of vegetables and fluted pumpkin (ugu) is always the most popular choice. With this recipe, everything goes really. You may choose to add just about any protein type you choose.

Chop the tomatoes, peppers and onion. Chop the garlic finely. Break the eggs and whisk with a pinch of salt, and keep aside. Heat the oil in a non-stick frying pan, then add onions. Cook the onions are soft and starting to go brown. Add the garlic, curry powder and smoked paprika, stir for 1 min, then add the peppers and tomatoes. Mix the content of the pan well and leave to simmer. Check the sauce and occasionally stir until it is reduced and oil is separated from the sauce. Add some salt to taste here. Reduce the heat to very low and pour the egg in. Mix the egg into the sauce, then bring the heat back to medium. Continue to stir with a wooden spoon to cook the eggs evenly. Use the spoon to scrape the sides into the centre of the pan, as this tends to cook first.
Chop the tomatoes, peppers and onion. Heat the oil in a non-stick frying pan, then add onions. Add the garlic, curry powder and smoked paprika, stir for 1 min, then add the peppers and tomatoes. Check the sauce and occasionally stir until it is reduced. This should take at least 10 mins, by which time the oil would be separated from the sauce. Add some salt to taste here. Reduce the heat to very low and pour the egg in. Continue to stir with a wooden spoon to cook the eggs evenly. Use the spoon to scrape the sides into the centre of the pan, as this tends to cook first.
