The site centers itself on simple yet careful from-scratch halal home-cooking that uses what is halal, tayibb, and abundantly local. Everything presented is halal, meaning no dishes are haraam (forbidden) in the Islamic diet. This includes avoiding pork, intoxicating food/drink, (pork-based) gelatine, and certain emulsifiers.

To promote the Sunnah of eating, a transition has been made into flexitarianism, opting for a mostly plant-based diet, moderate halal grass-fed meat, locally caught fish, and occasional natural sweeteners and ancient whole grains. In Algeria, as in many other countries, "hospitality" is not just a word; it is a mentality. It's one of the cornerstones of the Algerian way of life. Guests are admirably received in any area of the country. Sharing a meal is a way to know people and share the blessings of life.

The kitchen is the center of the home - the gathering place. Touching food is a way of passing barakah (blessings). It has a spiritual and healing dimension, promoting emotional and spiritual balance.

Food preparation is a process that takes time, requires participation, and yields no instantaneous results. It involves planning meals, shopping, and setting aside time to cook. This engagement with food enhances the dining experience.

Chin Chin Recipe Notes

A while ago a dear Instagram follower and the same sister that suggested I try the famous Nigerian dish Jollof rice suggested I try my hand making Chin Chin. It wasn’t until another IG follower tried my Jollof Rice that I remembered this intriguing little snack.

Wikipedia say they are doughnut-like but besides being fried and my dusting of optional and non-traditional cinnamon sugar I struggle with this comparison.

My only reservation about this recipe, it seems to use a lot of baking powder compared with other recipes I’ve seen around. This extra baking powder makes the Chin Chin puff up when fried creating luscious flakiness.

I made Chin Chin the typical small square shape, the thin rectangle / stick shape is popular too and aimed for each Chin Chin to be 2.5cm wide and 0.5 cm deep before hitting the fryer.

Peanut Butter Marinade

Peanut butter is key: The key to the whole operation is peanut butter, which isn’t the first ingredient when you think of classic marinades for meat, but it really works wonders here.

Perfect caramelization: The first time I tried it, I was a little bit skeptical, since I thought the peanut butter would burn on the hot grill, and if you’ve ever eaten burned nuts, you know it’s not a very pleasant flavor. But, somehow it doesn’t burn, and instead caramelizes and browns beautifully.

Yes, I very much loved how this came out visually, but the taste and texture were even more impressive.

Crowd-pleasing flavor: I’d describe the flavor as unusual, but at the same time, familiar and comforting. I’d also like to try the more authentic method, using ground peanuts instead of peanut butter. But, in the meantime, I absolutely loved this version.

The name "Tadjine" (also spelled tagine or tajine) pronounced "tay - jean" (tæˈʒiːn) refers to a traditional North African clay pot with the peaked lid but also the slow-cooked fragant stew that is cooked in it. Almost every every evolved culture has a sort of clay container in which to cook food slowly and directly in a wood fire. It connects us to our traditions, to the time of simplicity and to our past.

The color teal symbolizes happiness, intuition, tranquility, connection, creavity, self-reliance, generousity, love and balance. Everything we have envisioned for our hijrah and life in North African. It's also a color that invites one to reflect on one's relationship with the rest of the world.

All the recipes are uncomplicated, simple, easy-to-prepare, family-friendly dishes that require no advanced techniques or fancy gadgets and that are accessible to home cooks.

I'm a pragmatic busy person so I don't have hours to spend in the kitchen preparing one dish, so most of my recipes are made for the busy person in mind. I also love healthifying recipes and adding a North African flair to our international favourites.
