Initially, the plan was to make spring rolls, a popular choice for small chops. The filling was prepared and set aside, but the wrappers for the spring rolls proved challenging. The Internet made it look easy, but achieving thin slices was difficult. Rather than giving up, the situation was reframed, and the filling was repurposed.
Here’s how to make your own delicious Nigerian-style sausage shawarma at home.
Ingredients
For this recipe, you will need:
- Flat bread
- Sausages (German chicken sausage recommended)
- 1 teaspoon of groundnut oil
- Chopped and sliced vegetables
- Grounded chicken
- Mayonnaise
- Unsalted butter

Instructions
Follow these simple steps to create your own Nigerian sausage shawarma:
- Add the 1 teaspoon of groundnut oil in a pan.
- Add the chopped and sliced vegetables and grinded chicken, then stir. This mixture will be a dry one and not too greasy.
- When it cools down, add mayonnaise and stir.
- Get your flat bread and open it into two.
- Add your sausage as well before folding in.
- I got my non sticky pan out and added a little unsalted butter to grease it.
Voila, your shawarma is ready!
For the Nigerian Style Chicken Shawarma

- In a pan on high heat, toast the cumin seeds for 2 mins or until light brown. Remove from heat and add the seeds in a pestle and mortar. Pound until smooth.
- In a medium mixing bowl, add in the chicken marinade and chicken whisk together until well incorporated. Marinade the chicken for 30 mins or overnight
- In a small bowl, add in the shawarma sauce ingredients and whisk together until well combined. Set aside.
- In a bowl, add in the coleslaw ingredients and a tbsp of the shawarma sauce. Mix together until well combined and set aside.
- In a large pan on high heat, add in vegetable oil. Once the pan is hot, add in the chicken thigh skin side down. Cook one side for 6 mins or until browned and then flip the other side and cook for about 6 mins or until chicken is cooked.
- Cut the chicken into small pieces and set aside.
- Using the same pan on high heat, add in the sausage. Cook for 5 mins or until sausage is cooked.
- To serve, get a piece of pita bread and smear the shawarma sauce, add the chicken, sausage, coleslaw and some extra sauce. Wrap up and enjoy !
