This spicy broth is extremely rich in flavor, vibrant in appearance, and super easy to prepare at home. This soup is very popular in Nigerian households, and there are many reasons why. Some people use it as comfort food, others use It to clear their sinuses.

Peppersoup (or pepper soup) is a soup from Nigeria, made using various meats or fishes, chili peppers, salt, scent leaves, and calabash nutmeg as its primary ingredients. It is a spicy soup that has a light, watery texture. While it is served as an appetizer at official gatherings, pepper soup is more popular at pubs. Pepper soup is typically a watery soup.

I want to talk about the assorted meat recipe I have come to learn, in the last few years that several recipes exist. This one, however, is made with assorted meat. I have used the phrase ‘Assorted cow meat’ on several parts of this food blog. If you don’t understand what I mean, here is an explanation. You could make assorted meat pepper soup using this recipe.

Ingredients for Assorted Meat Pepper Soup

Here is how I Make pepper soup with assorted cow meat.

Ingredients:

  • 1 kg assorted meat (goat or cow)
  • 3 Seeds of Ehu (Calabash Nutmeg)
  • Scent leaves (a handful)
  • Sliced Utazi Leaves (optional, to taste)
  • 2 stock cubes
  • 3 Tablespoons of ground crayfish (optional)
  • 1 Cup Sliced onions
  • Salt and pepper to taste
  • 1 teaspoon Beef seasoning spice
  • 2 garlic cloves
  • Half-finger of ginger
  • Half teaspoon lion Peppersoup spice
  • Teaspoon Paprika

Preparation:

  1. Pound or blend the ginger and garlic together.
  2. De-shell the calabash nutmeg (Ehu) then go ahead and blend/pound together with the uziza seeds and half cup of crayfish
  3. Slice the onions and utazi leaves and set aside in a plate.

Cooking Instructions:

  1. Wash the meat and season with a teaspoon of beef seasoning, a teaspoon of salt, half cup of sliced onions and 1 seasoning cube).
  2. Once the meat boils for 10 minutes add 3 cups of water to it and cook till it becomes tender and chewable.
  3. Add the pepper soup spice, the ground ehu, uziza, crayfish, and remaining onions.
  4. Add a teaspoon of Paprika and allow it to boil for 3 minutes.
  5. Add the sliced utazi, salt and (ordinary) pepper to taste.

NOTE: Uziza seeds are very pepperish, be sure to taste before adding scotch bonnet. Use pepper at your discretion.

Step-by-Step Cooking Process

Start cooking the meat with some simple ingredients. Cook the meat for just 10 minutes then add about 3 cups of water and cook for 30-50 minutes until the meat becomes tender and easy to chew. Add the Paprika - a teaspoon. Paprika is a spice made from the dried fruit of red bell pepper. Add the sliced utazi, salt and (ordinary) pepper to taste.

Goat Meat and Plantain Pepper Soup

Goat meat and Plantain Pepper Soup is simply Nigerian style Pepper Soup dish made with Goat meat and unripe Plantain. Prepare meat marinade by finely blending scotch bonnet, onion, garlic and gingerCut goat meat into tiny pieces and place in pot. Season with marinade , salt, seasoning cube, Cameroon pepper and paprika. Let it cook for 30-40 minutes on medium heat.While meat is cooking boil unripe plantain for 10 minutes, drain water and set asideOnce meat is cooked, add 4 cups of water to the pot, boiled plantain and season with nutmeg, pepper soup spice, crayfish and a little more salt. Fish Pepper Soup

Tilapia Fish pepper soup would have to be one of my favourite Nigerian Fish Pepper Soup. It is so simple to cook and takes less than 20 minutes. Tilapia and Yam Pepper soup is really just parboiled yam cooked in fish broth. The best fish to use is Catfish as it is naturally tasty however, Tilapia is easier to come by in these parts, so I find myself using Tilapia more often than not.

How to make the best Goat meat Peppersoup /Nigerian pepper Soup

Pepper Soup Spice Mix

Pepper soup spices- spices are made of calabash nutmeg, pimento seeds, peppercorns, alligator pepper, selim and coco plum (gbafilo). Gently toast the whole spices-aniseed pepper, coriander, cumin, fennel seeds, and black peppercorns-in a pan over low to medium heat, for a minute or so. Remove from the heat when the fragrance starts coming through. Allow the spices to cool, then place them in a spice grinder with the rest of the spices and blend until fine.

Pepper soup spice mix:

  1. Toast the spices in a dry skillet on medium- to medium-low heat, stirring frequently until fragrant, about 5-6 minutes. Remove from the heat and let cool completely.
  2. Powder in a spice grinder or mortar and pestle until finely ground. Store in an airtight jar in a cool pantry or the freezer, where it will last for several months.

To make the pepper soup, put the chopped meat in a large pot and cover with about 2 cups of water. Add 1 tablespoon of the spice mix, some salt, the Maggi bouillon cubes, some red chile powder, the crayfish (if using), and the lemongrass bundles. When the liquid comes to a boil, add the remaining 8½ cups of water and the rest of the pepper soup spice mix. Allow to cook over medium-low heat. Adjust the salt and pepper to taste and simmer till the meat is soft but not falling off the bone.

Tips for Enhancing Flavor

  • Ginger: If you haven’t added this to your soup before now is the time to step up your flavours.
  • Garlic: Since garlic has such a strong flavour, you only need 3 cloves. This way you get the required kick without overpowering the authentic flavour of your dish.
  • Scotch bonnets or habanero: The amount of pepper you add will depend on how much heat you can handle.

Serving Suggestions

You can serve alone with a chilled bottle of your favorite drink. Finish with the basil and a drizzle of palm oil, and serve with boiled yam, plantains, or potatoes.
