Nigerian spring rolls need no introduction. If you have been to any true Nigerian party or celebration, I can assure you that it has already introduced itself. Most people find it in the midst of their “small chops” bowls and wonder, “What is this crispy delight?” While those who already know its name, wonder, “How do I make this deliciousness at home?" Well today, I’ll share with you a no-fail, party-pleasing Nigerian spring roll recipe.This spring roll recipe has been perfected over years of catering for friends and family, and you also get an easy recipe on how to make your own crispy spring roll wrappers at home.

Ingredients for Nigerian Spring Rolls

For the filling, you could use just about anything such as vegetables, chicken, beef, noodles etc. You have a choice between pork, beef, or chicken, or you can even go meat-less if you want to. The other ingredients and spices are also very accessible, and in the absence of any, you can make easy substitutes.The following quantities of ingredients will make a filling for 15 spring rolls.For the Spring Roll Filling:
  • 3 tablespoons vegetable oil
  • 3 cloves chopped garlic
  • 1 medium chopped onion
  • 800gr minced meat (pork, beef, or chicken)
  • 1 teaspoon dried thyme
  • 1 teaspoon ginger powder
  • 1 teaspoon black pepper
  • 1 teaspoon beef seasoning powder
  • 400 grams sliced cabbage
  • 3 carrots sliced
  • 1/2 cup red and green bell peppers
  • 1 tablespoonful mixture of soy sauce and teriyaki sauce
  • Salt to taste
Unlike our first Nigerian spring roll HERE, which was softer on the inside because the cabbage and carrot were steamed, the filling for this recipe below has a little crunch to it, which most people simply adore; and of course, the final result comes out crispy and delish.

How to Make Nigerian Spring Rolls at Home

So without much ado, let me show you how to prepare Nigerian spring rolls, the best you have ever tasted.
  1. Heat up 3 tablespoons of vegetable oil until hot.
  2. Add 3 cloves of chopped garlic and 1 medium chopped onion; stir-fry until fragrant.
  3. Add 800gr minced meat (pork, beef, or chicken) and stir until pale.
  4. Add 1 teaspoon dried thyme, 1 teaspoon ginger powder, 1 teaspoon black pepper, and 1 teaspoon beef seasoning powder.
  5. Stir to combine and let the meat absorb the herbs and spices.
  6. Add 400 grams sliced cabbage, 3 carrots sliced, 1/2 cup red and green bell peppers, and mix well to combine.
  7. Add 1 tablespoonful mixture of soy sauce and teriyaki sauce and salt to taste.
Spring roll is a light, simple yet elegant snack that could be placed in the Nigerian Small chops Category. If you are making vegetable spring rolls, you could lightly steam the vegetables to be filled into the pastry. For me, I prefer slicing my vegetables very thinly and filling it into the spring roll pastry before frying. This is because I like my vegetables fresh and not soggy as is the case with most pre-packed spring rolls.

Assembling the Spring Rolls

  1. Step 1: Scrape the back of the carrot, rinse, and grate thinly. Wash the cabbage and dice thinly. Wash the spring onions and dice thinly.
  2. Step 2: To assemble, take one spring roll pastry (you could also use the pastry like that without cutting it into squares), place a very small amount of each vegetable on it.
  3. Step 3: Roll it up gently, making sure it’s firm and not loose.
  4. Step 4: Once you get to the end of the spring roll pastry, seal up the contents permanently by rubbing a mixture of flour and water liquid at the edge.

How To Wrap A Spring Roll ‼️

You can use store-bought wrappers for your spring rolls or you can make them yourself. You can use any combinations of beef and/or vegetables for your spring rolls filling.
