How to Roast Peaberry Coffee Beans

For optimal results, you can choose between the following three roasting methods.

  1. First, peaberry beans can be roasted in a pan or a particular roasting device. Here, you need to control the exact temperature and stir constantly.
  2. Second, use a roasting machine.
  3. The last method is with the oven. Arrange some coffee beans on a heated baking sheet. Adjust the roasting time to the light-dark roast stage so that the flavor profile matches your preference.

Ichamama Peaberry Coffee

This coffee is from the Ichamama Factory, a washing station near Karima Hill in Nyeri. The station was named after the Ichamama river which flows near enough to the station to be the source of water for processing coffee.

Ichamama is one of 19 washing stations that make up the Othaya Farmer's Coopertive Society, a coop-run organization, one of the older ones I might add. Othaya started in the mid-1950s, ballooning from 250 original members to 15,000 strong today. Karima is one of the older of the group, erected in 1964, and currently with nearly 1,000 farmer members (and is one of the most productive of the 19). The station sits at about 1750 meters above sea level, and coffee is grown in the higher altitude areas surrounding it.

This is the Peaberry outturn, a separation of all of the small round beans from the flat beans (traded as grades AA, AB, C, and others). I should note that we found some flat beans mixed in with this lot of peaberries. It's not all that uncommon, especially considering the separation is done using perforated screens/sieves.

Hints of citrus, red fruits, and mulling spices. There's a broad range of flavors to be unlocked in Ichamama that transform and shape shift with roast. We're loving it at both City and Full City roast levels, and the biggest tradeoffs are lighter, brighter flavors for more juicy dark fruits that come with deeper development.

There are elements of fig bar and red fruits in the dry ground coffee, with spiced sugar, and molasses notes in both light and darker roasts. The wet aroma has more potent fruit and brown sugar smells, alluding to dried papaya, guava pastry, and more.

Lighter roasts extract accents of orange, dried cranberry, and a hint of green melon, culminating in a delicious fruited mix. It has a mouth-pleasing quality at City roast level that's highlighted by orange notes that are both juicy, and a little grabby on the palate like citrus peel, or even black tea to some degree. The coffee shows its aromatic side as it cools, with a hint of mulling spices in the finish.

The fruited flavor notes at Full City have juicy fruit characteristics, like plum, grape, and even a hint of tropical fruit punch.

Most recently, a peaberry lot from the Gitwe region of Kenya finished fourth at the prestigious Italian Brewers Cup.

“In my experience, peaberry coffee has a lighter body and can have a beautiful and very prominent acidity with a light florality,” she says.

As mentioned, a great cup of peaberry coffee starts with the proper brewing method. In this method, you only need to use a V60 or Chemex. First, coarsely grind the peaberry coffee beans, then gently saddle them with hot water.

For coffee with a thicker texture, you can brew it using the French Press technique. Mix the coarsely ground coffee beans with hot water.

Finally, use an espresso machine to produce a rich and intense brew of peaberry coffee. Here, you’ll first need to grind the peaberry beans finely.

“When it comes to the packaging I have realised that our customers really appreciate guidance on brewing,” she explains. “For example, how hot should my water be? “All this information helps the customer understand the coffee better and faster.

While peaberry coffee may look different to what most roasters are used to, its freshness and quality are still affected by the same external factors.
