Ethiopian food trucks are bringing the vibrant and unique flavors of East Africa to the streets of America. Among these culinary pioneers is Makina Cafe, founded by Eden G. Egziabher, an Eritrean-American entrepreneur in NYC, and Tigi's, with over 10 years of experience in the food industry, starting in Ellicott City-MD and now in Stone Mountain-GA.
Makina Cafe: Habesha Cuisine in the Big Apple
Born in Ethiopia from parents of Eritrean descent, Eden G. Egziabher was raised amidst a vibrant mix of Ethiopian, Eritrean and Italian cultures. Eden prides herself on being the first Eritrean-American female entrepreneur in NYC with a food truck serving “Habesha” food. Tasty, healthy, nutritious and something quite unique, Makina Cafe serves up breakfast and lunch to New Yorkers that are tired of the same old take-out options.
In the future, Eden hopes to bring the Makina experience to other parts of the US and use Makina Cafe as a charitable platform that gives back to the community.
