Buffalo cheese, rice, dips such as baba ghanoush (mashed grilled eggplant mixed with tahini, lemon juice, seasoning and olive oil), kibda (fried liver), stuffed pigeon, manshi (stuffed vegetables), falafel, and kofter (spiced meatballs) are among some of the favorite local cuisine.
